Glazed Banana Bread

Glazed Banana Bread (makes 2 loaves)

Mix together:
3 c. flour
1 1/2 tsp. baking soda
2 1/2 c. sugar
1 1/2 tsp. salt
1 c. buttermilk
1/2 c. melted butter
1 1/2 tsp. almond extract
1 c. oil
3 eggs
1 1/2 tsp. vanilla
3 mashed, overripe bananas

Preheat oven to 350*. Mix together flour, baking soda, sugar, and salt. Add buttermilk, melted butter, almond extract, and oil and mix well. Add eggs, vanilla, and bananas. Mix well. Grease and flour two bread pans and divide batter evenly between the two. Bake at 350 * for 60-70 minutes or until a toothpick inserted in the middle comes out clean.


Glaze:
3/4 c. sugar
1/4 c. orange juice
1/2 tsp. vanilla
1/2 tsp. almond extract
2 Tbsp. butter

In a small saucepan, combine all ingredients. Heat on stove to melt together. DO NOT boil. Pour directly on warm bread loaves from stove. I like to remove the loaves from the bread pans before pouring the glaze on so the sides of the loaves get glazed, too--a basting brush is very helpful for glazing the sides.
